SUMMARY OF EMPLOYMENT DETAILS AND OTHER INFORMATION
The normal working week is a minimum of 38 hours and runs from Friday to Thursday. The actual hours worked vary in each department. We pay a minimum of £5.52 per hour to all employees other than chefs, office and other senior staff. Chefs, office and other senior staff are paid at a rate agreed on engagement. Overtime is paid at your basic rate for the first four hours and at £6.50 per hour for any hours worked thereafter in any one working week. Wages are paid weekly, in cash, commencing on the third Friday of your employment. We hold two weeks' wages in hand that you receive in your final pay packet only after having completed your agreed period of work. Your weekly payslip will show your hourly rate of pay, the hours worked in that week, any overtime if applicable and deductions for Rent that count towards the National Minimum wage. It will, in addition, show an agreed charge for services (the ballance of accommodation owed) that will be deducted after the deduction of Rent, Tax and National Insurance contributions and does not form part of the National Minimum Wage.
Rent is charged at £30.10 per week for all live-in staff.
Services - all the things ancillary to the provision of accommodation including food - are charged at £28.00 per week. This concessionary rate is increased by £5.00 per day retrospectively to your employment start date if you do not complete your contract and stay until your agreed departure date. This means that if, for any reason, you leave early or are dismissed for gross misconduct, we keep any pay held in hand and a refund is given of any difference.
Any holiday taken during your employment must be by mutual agreement with your Head of Department.
The holiday year runs from March 14th 2008 to March 13th 2009. Your holiday entitlement is 24 days per year calculated on a pro rata basis and includes customary holidays that occur during your employment. You are not paid extra for customary holidays. Holiday pay is paid at your basic rate. This is held in arrears with your two weeks' in hand and paid on satisfactory completion of your contract.
On completion of your contract your final wage packet will contain that week's pay, your two weeks' pay held in hand and your untaken holiday pay entitlement.
All employment offered is subject to contract, a copy of which will be signed by both parties before employment commences.

The Rate of the National Minimum Wage
The hourly rate of the National Minimum Wage is £5.52 if you are 22 years of age or older (with a few exceptions). £4.60 if you are 18-21 years of age £3.40 if you are 16-17 years of age
We pay a minimum of £5.52 to all employees.
If you believe, on reasonable grounds, that you may be being or have been paid at a rate below the National Minimum Wage, you have a right of access to the records your employer keeps about you in relation to the National Minimum Wage. Details of this right and the conditions that apply to it are to be found in section 11 of the National Minimum Wage Act 1998.
